Roasted Potatoes and Onions

The other night, my husband was grilling steaks and asked me to come up with a side. We already had a nice salad, so all that was missing was a starch. I offered up rice and couscous and risotto but all I got in return were head shakes. We are big potato fans, but we already had them baked, boiled, and mashed earlier that week.

I found some B potatoes in the pantry along with a Vidalia onion. Why not roast them? All I had to do was cut them up, put them in a pan and let them cook. Perfect! They turned out wonderful and went great with the steaks my husband grilled.

Ingredients:
B Potatoes – 3 lbs
1 large Vidalia onion
2 cloves of garlic – chopped
1 tbsp. of oregano
½ stick of melted butter

Directions:
Cut potatoes in quarters and cut onion in half and then again in 5 or 6 pieces. Use non-stick spray to coat the inside of a 9 x 13 pan. Place potatoes, onions and garlic in pan and pour melted butter on top. Cook at 400 degrees for 45 minutes. The smell of the onions roasting is wonderful and they were a perfect side to our steaks!
