I LOVE when my husband makes vegetables on the grill. The grill taste cannot be duplicated in the oven or on the stove. The bonus part to veggies cooked on the grill is that there are no extra pots or pans to wash!
Last night my husband went out to the store with the intention of bringing back asparagus. However, the only asparagus they had were too thick. Thankfully, he found beautiful zucchini to make instead. Grilled zucchini are so easy to make and we have served them many times to our guests. They are fresh and crisp and have that fabulous grilled taste. These zucchini only take 10 minutes to make, including prep time!
2 med zucchini
*Vegeta is a gourmet seasoning and soup mix that is made in Croatia. You can purchase it at ethnic food stores or online at Amazon.
Cut zucchini in half lengthwise
Pour a small amount (1/2 tsp?) on each zucchini and rub in with fingers or basting brush
Sprinkle an even amount of spices on each zucchini
Place on lower rack of grill (Green side down) over a low to medium flame for 6 to 8 minutes.
